Yellow Croaker in Garlic Brown Sauce

Ingredients
Large yellow croaker1 whole (600g)
Garlic (peeled)20 clove
Corn starch2 Tbs
Hong-shao brown sauce1 portion
Cooking oil1/4 cup
Water1/2 cup

Instructions
1.Clean the fish and pat dry the fish with paper towel to avoid oil spill while cooking. Cut 4 diagonal lines on each side of the fish body, deep to the bone.
2.Prepare the Hong-shao Brown Sauce.
3.Evenly spread 2 tbs. of corn starch over the fish.
4.Heat 1/4 cup of oil in a non-stick pan. Add the fish and pan-fry over medium-high heat until golden brown on both sides.
5.Push the fish aside. Turn down the heat to low. Use the remaining oil to brown the garlic.
6.Pour in the Brown Sauce and 1/2 cup water; cook for 5 minutes over medium-low heat - turn the fish once and spoon the sauce over the fish from time to time.
7.Turn the heat to high and cook until the sauce is thick. Transfer the fish onto a plate then top with the sauce and garlic.

做法
1.將魚洗乾淨後用紙巾將魚擦乾,以免煎的時候油爆。在魚身斜劃4刀,兩面都要,這樣魚比較入味內部也比較容易燒熟。
2.準備好紅燒醬汁
3.魚身均勻抹上2大匙太白粉。
4.鍋燒熱後加入1/4杯油,把魚入鍋用中大火煎至兩面酥黃。
5.將魚推到一旁。火轉小,用剩餘的油將大蒜煎黃。
6.倒入紅燒醬汁及1/2杯水,用中小火燒約5分鐘,中途魚要翻面一次並不時舀起醬汁淋在魚身。
7.轉大火將醬汁收到有一點粘稠。將魚鏟出裝盤,再淋上剩下的醬汁和大蒜。
